  • Oat Flour
  • Very Ripe Bananas
  • Unsweetened Applesauce
  • Eggs
  • Baking Powder
  • Cinnamon
  • Vanilla Extract

Method
 

  1. Step 1: Prep and Mash

    Preheat your oven to 350°F (175°C). Grease two 4-inch round cake pans (or large ramekins) with coconut oil and line the bottoms with parchment paper.
  2. Step 2: Whisk the Wet Ingredients

    In a medium bowl, whisk the mashed bananas, applesauce, eggs, and vanilla extract until fully combined and slightly frothy.
  3. Step 3: Fold in the Dry

    Add the oat flour, baking powder, and cinnamon to the wet mix. Stir gently with a spatula until just combined.
  4. Step 5: Cool and Frost

    Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely. While cooling, strain your Greek yogurt through a cheesecloth or paper towel for 15 minutes to thicken it further for piping. Frost gently.
